A couple of weeks ago, he began creating dishes for his brand-new private clients, a couple who had recently returned to the United States from Europe—right when it was becoming very challenging to find fresh produce in the stores.
“Fortunately,” he said, “I was able to place just one single call to my product specialist at The Chef’s Garden, and then I had three boxes of incredibly beautiful produce quickly delivered to the home. In other words, I got the best produce in the world almost overnight.”
Bryan admits he has high expectations and adds that the boxes of fresh vegetables from the farm “exceeded them.” And, the dishes he created for his new clients with these veggies and herbs made a very favorable impression on them.
“I was able to make these dishes,” he said, “without even having to leave home to try to sort through produce at a store—and that made me look like a rock star.”
For now, Bryan is the only person in his client’s household who is going outside the home. “So,” he says, “I’m doing all I can to protect them, which made the three boxes of fresh vegetables that I received such a gift.”
He notes how long the greens he received have stayed fresh, with the root vegetables staying at peak deliciousness even longer. “Plus, the variety of microgreens that I received,” he adds, “allows me to make the Michelin star-quality food that my clients expect.”
Bryan is also brainstorming how to pickle and otherwise preserve vegetables from The Chef’s Garden for an even more varied dining experience for his clients.
Chef Bryan’s Relationship with the Farm
He has been a valued customer for more than 16 years and admits that he enjoys the challenges associated with ordering a best-of-the-season box, one in which he doesn’t know exactly what he’ll receive.
“When I had my restaurant, that surprise factor caused me to keep changing my menus and keeping it interesting. Working with private clients stimulates my ability to think and be creative with the products—and the clients are amazed at the variety of what’s available from The Chef’s Garden.”
