Dario, hailing from Mayaguez, Puerto Rico, draws culinary inspiration from the rich amalgamation of Spanish, African, and Taino traditions in his native country. Initially introduced to cooking by his grandmother during a childhood shaped by parental work commitments, Dario harbored aspirations of becoming a scientist or engineer until a transformative encounter with Master Chef on The Discovery Channel redirected his path.

His culinary journey spans Puerto Rican restaurants, a cruise ship kitchen, and Spain, ultimately leading him to The Culinary Vegetable Institute. Notably, Dario’s early culinary success featured a memorable dish—whole boneless chicken stuffed with sweet mofongo—that marked the beginning of his gastronomic prowess.
