Eggplant

Fresh eggplant is an egg-shaped fleshy fruit (commonly considered a vegetable!) with a slight but pleasantly bitter taste when raw; cooking eggplant brings out its sweet, nutty flavor. There are 376+ known varieties, and we’ve tested 100+ in our eggplant garden. Now we grow the varieties chefs tell us are the very best, and this includes the lao white eggplant with a smooth texture and full, nutty, and sweet flavor.

Eggplants are commonly used in sweet and savory dishes and can be roasted in the skin until charred, so the pulp can then be removed and blended with other ingredients.
