Ingredients
5-6 pieces fresh asparagus, trimmed and cut into 1–2″ pieces
½# salt, pepper & sage sausage (loose or casings removed) – find this in our at home meats category!
8 large eggs
½ cup whole milk or cream
½ cup grated Parmesan (or pecorino for more bite)
1 tbsp olive oil or butter
Salt, to taste
Freshly cracked black pepper
Optional garnish: fresh herbs (chives, parsley, or sage leaves)
Directions
Preheat oven to 350°F.
Cook the sausage:
Heat an oven-safe skillet (8-10″) over medium heat. Add sausage and cook until browned and cooked through, breaking it into bite-sized pieces. Remove and set aside, leaving a bit of fat in the pan.
Sauté asparagus:
Add olive oil or butter if needed. Toss in asparagus and sauté for 3–4 minutes until just tender but still bright green.
Build the base:
Return sausage to the pan and spread everything evenly.
Mix the eggs:
In a bowl, whisk eggs with milk/cream, a pinch of salt, and generous black pepper.
Combine & cook:
Pour egg mixture over the sausage and asparagus. Let it cook undisturbed on the stovetop for 2–3 minutes, just until the edges begin to set.
Finish in oven:
Transfer skillet to the oven and bake for 12–15 minutes, until the center is just set.
Finish & serve:
Rest for a few minutes. Garnish with herbs, slice, and serve warm.
