Jerusalem Artichoke Pizza with Kale and Bleu Cheese
This pizza combines the earthy sweetness of roasted Jerusalem artichokes with the hearty crunch of fresh kale, all nestled atop a bed of golden, crispy pizza crust. Each bite is a harmonious blend of textures and tastes, with the creamy richness of bleu cheese adding a delightful contrast to the savory ensemble.
Ingredients
- 1 large pizza crust, either store-bought, or made from scratch
- 8 oz Jerusalem artichokes, sliced on mandolin and stored in cold water
- 8 oz mascarpone cheese
- 4 oz bleu cheese crumbles
- Salt and pepper to taste
- 4 or 5 sprigs of thyme
- Olive oil as needed
Directions
STEP 1
Spread room temperature mascarpone cheese on pizza crust, season with salt and pepper.
STEP 2
Remove artichokes from water and pat dry with paper towel.
STEP 3
Arrange the artichokes on top of the mascarpone cheese and top with bleu cheese and chopped thyme.
STEP 4
Drizzle with olive oil and place in a 475 degree oven until pizza is crisp, approx. 7-10 minutes.
