Quick Pickled Radish

Ingredients
- 2 pounds radish
- 1 cup vinegar
- 1 cup water
- 1 tbsp sea salt
- ½ tsp mixed peppercorns
- ½ tsp mustard seeds
Directions
Step 1
Thinly slice the radishes and divide between 4 jars or equivalent. The amount of radishes and brine used may vary based on the size and shape of your jars and how you slice your radishes.
Step 2
Bring the vinegar and water to a boil in a medium saucepan. Pour the brine over the radishes, then stir in the salt, peppercorns and mustard seeds. Let cool and chill until ready to use. Pickled radish slices will be ready to eat in about 1 hour.
