Rainbow Root Beer Leaf Wraps
Delight in the vibrant flavor of our Rainbow Root Beer Leaf Wraps. Wrapped in our large root beer leaves and filled with creamy hummus, crisp carrots, beets, and greens, offering a refreshing and colorful meal.
Ingredients
For the Wraps:
- 4 large Root Beer Leaves
- ½ cup hummus
- 4 carrots, peeled and cut into matchsticks
- 2 beets, cut into matchsticks
- 6 sorrel sprigs
- ½ cup Gold Pea Tendrils
- ½ cup watercress
For the Dipping Sauce:
- ½ cup peanut butter
- 2 tbsp sweet chili sauce
- 2 tbsp soy sauce or tamari
- ¼ cup rice vinegar
- 1 tbsp garlic powder

For the Wraps:
- Working with one root beer leaf at a time, trim away the thick, tough part of the stem.
- Spread 1 tablespoons of the hummus down the center of one leaf. Top with a quarter of the carrots, beets, sorrel, and 2 tablespoons each of gold pea tendrils and watercress.
- Fold the leaf in toward the filling (like you’re rolling a burrito or wrap) and then tightly roll the filling inside the leaf.
- Repeat with the remaining leaves and filling. Cut each wrap in half.
*Feel free to add a protein of choice. We used Halloumi Cheese.
For the Dipping Sauce:
- In a medium bowl, stir together the peanut butter, sweet chili sauce, soy sauce, rice vinegar.
- Serve the wraps immediately with the dipping sauce or cover them tightly and store in the refrigerator for up to two days.
