Sautéed Carrots with Miso Butter and Toasted Almonds
Sautéed Carrots with Miso Butter and Toasted Almonds is a side dish that elevates the humble carrot to a gourmet delight. Ingredients
For the Carrots:
- 2# carrots, julienned
- 1 cup, chopped almonds, heated in a dry pan until toasted and fragrant
- 2 tbsp miso butter, recipe follows
- salt and pepper, to taste
- Furikake seasoning, optional
For the Miso Butter:
- 3 tbsp butter, unsalted, softened to room temp
- 1 tbsp white miso paste
Directions
For the Carrots:
STEP 1
In a large skillet, heat olive oil. When oil is hot, add carrots, sautéing quickly until color begins to form on carrots (carrots should be sautéed but still relatively crispy).
STEP 2
Remove carrots from heat. Add in the chopped almonds and toss. Then add in miso butter and allow butter to melt from the residual heat from the carrots.
STEP 3
Season with salt and pepper.
STEP 4
Plate on a platter or bowl and and add Furikake seasoning, if desired.
For the Miso Butter:
STEP 1
Combine ingredients and mix until completely incorporated.
