Sweet Potato Hummus

Ingredients
- 1 medium sweet potato, roasted and diced
- 1 tbsp extra-virgin olive oil, plus more for garnish
- ½ cup canned chickpeas, drained and rinsed
- 1 large garlic clove, roughly chopped
- 2 tbsp tahini
- 2 tbsp lemon juice
- ½ tsp ground coriander
- ½ tsp ground cumin
- 2 tsp water
- Salt and pepper, to taste
- Drizzle with chili crunch, if desired
Directions
Step 1
Combine the roasted sweet potato, chickpeas, garlic, tahini, lemon juice, salt, coriander cumin and water into a food processor.
Step 2
Process until combined, scraping down the sides of the bowl as needed.
Step 3
Add more water, if desired, for a creamier hummus.
Step 4
Transfer to a bowl and drizzle with additional olive oil and chili crunch.
Step 5
Serve with raw vegetables or pita.
